Holiday Dark & Stormy Truffles

These four ingredient truffles are easy to make and dare I say, no guilt and DELICIOUS? I am a dark chocolate fan so these are perfectly decadent and dark for me. Even better, they are raw, vegan, and HEALTHY too! These truffles are so easy to make you can make this a fun family activity. Just blend ingredients in your Vitamix, Blentec, NutriBullet or your Cuisinart, roll into shape, roll in ground walnuts (or jimmies or cacao powder) and let them chill! Takes all of 15 minutes to make enough to get through the holidays. And who doesn’t need chocolate during the holidays?

Grind one cup of raw walnuts and one & 1/3 cups of pitted dates until finely ground. Add ½ cup of raw almond butter and process until well mixed. Add the cacao powder (unsweetened cocoa powder) and pulse to mix well. Use your hands to roll into small balls less than an inch in diameter and then roll in crushed walnuts (Cuisinart best here). Place on parchment paper on a cookie sheet and leave in the fridge for at least an hour.

I buy all of the ingredients at Trader Joe’s. Make sure your dates are PITTED! I also prefer organic ingredients. Try them!
